Spekulatius Biscuits
Spekulatius, or Spekulaas, is a shortbread biscuit from the North German, Dutch, and Belgian region. It makes for a nice wintery snack.
Ingredients
- 35g / ⅓ cup ground almonds
- 70g / ⅓ cup butter
- 75g / ⅜ cups brown sugar
- ½ egg
- ½ tsb cinnamon
- Some muscat
- Knife point of ground clove
- ½ tsp cardamom
- 1 pinch of ground ginger
- Zest of ½ lemon
- 1 cup / 180g flour
- ½ tsp baking powder
Instructions
- Mix butter and sugar.
- Add egg.
- Add spices and lemon zest.
- Add flour and baking powder and knead into a dough.
- Store in the fridge for an hour.
- Roll out the dough to 3mm height.
- Cut out pieces and bake for 10 minutes at 180°C / 350°F.
