Vegan Egg Yolk
When baking, you sometimes want to use egg yolk to give your pastries the right finish. If you don't want to fight the chickens over their eggs though, you can use the recipe below instead to make your own vegan egg yolk substitute. Yields the equivalent of 2 egg yolks.
Ingredients
- 2 tbsp chickpea flour or corn starch
- 2 tbsp regular flour
- ½ cup water
- 2 tsp canola oil
Instructions
- Mix chickpea flour, flour, and water in a microwave-safe bowl
- Microwave for 2 minutes, whisking repeatedly
- Mix in oil into the hot mix
- Beat well
Keep tightly covered in a fridge for up to 1 month
